MM - Direct steam injection and convection ovens

Foinox “RED LINE” are professional gastronomy ovens whose characteristics can guarantee high cooking performances and uniformity along with an easy cleaning and robustness. Some of its main features are the trapezoidal and stamped cooking chamber with rounded angles made in stainless steel, the double tempered glass easily openable and the drainage basin that conveys the condensation into the drain pipe.

 
Direct steam injection and convection ovens
The ovens in the MM range have an all-in-one cooking system: convection + direct steam injection. In order to guarantee high level cooking performances, Foinox has perfected a system that creates steam without using a boiler. A special injector sprays water directly on the heating element inside the cooking chamber; the fan micronizes and distributes the obtained steam evenly around the oven, creating an environment where the humidity is ideal also for the most delicate foods.
